Ingredients
- 140 grams (1 cup) all-purpose flour
- 144 grams (1 and 1/2 cups) rolled oats
- 140 grams (2/3 cup) granulated sugar
- 150 grams (2/3 cup) unsalted butter (melted and cooled)
- 300 grams (2 cups) blueberries
- 50 grams (1/4 cup) granulated sugar
- 2 teaspoons cornstarch
- 1 tablespoon lemon juice
- 1 and 1/2 teaspoons lemon zest
Instructions
- Preheat your oven to 350°F (177°C). Grease an 8-inch square ovenproof dish and line it with parchment paper.
- In a medium bowl, mix together the flour, rolled oats, and sugar. Stir in the melted butter until combined.
- Set aside one-third of the mixture for crumbles and evenly spread the remaining mixture into the prepared dish.
- In another bowl, combine blueberries with sugar, cornstarch, lemon juice, and lemon zest. Pour this mixture over the crust.
- Sprinkle the reserved crumble mixture on top of the blueberries and gently press down.
- Bake for about 38-40 minutes until golden brown. Let cool completely before slicing.
