  • 1011 strips crispy bacon
  • 2 heads broccoli (about 1 and 1/2 pounds)
  • 1 cup dried cranberries
  • 1/3 cup roasted sunflower seeds
  • 1 cup shredded cheddar cheese
  • 1/3 cup chopped red onion
  • 1 & 1/4 cups Miracle Whip OR mayonnaise
  • 1 lemon zest
  • 1 tablespoon lemon juice
  • 2 tablespoons white wine vinegar
  • 1/4 cup sugar
  • 1 & 1/4 teaspoons kosher salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon dry mustard
  • 1/8 teaspoon cayenne pepper

Instructions

  1. Preheat oven to 400°F (200°C). Bake bacon on a lined baking sheet for about 15 minutes until crispy. Set aside to cool and chop.
  2. In a large bowl, whisk together Miracle Whip (or mayonnaise), lemon zest and juice, white wine vinegar, sugar, salt, black pepper, dry mustard, and cayenne pepper until smooth.
  3. Chop broccoli into small florets and add to the bowl along with cranberries, sunflower seeds, shredded cheese, and most of the chopped bacon.
  4. Gently mix until well combined. Chill for at least 20 minutes before serving.
