Instructions

  1. Wash peaches thoroughly and blanch in boiling water for 30 seconds. Transfer to cold water to halt cooking. Peel while warm.
  2. For light syrup, mix either 2 cups sugar with 4 cups water or 1 ½ cups honey with 4 cups water, bringing it to a boil and keeping it warm.
  3. Halve the peeled peaches and remove pits. Pack tightly into sterilized jars and cover with peach juice.
  4. Fill jars with syrup, leaving ½ inch headspace, then wipe rims clean.
  5. Process jars in a boiling water bath for 20 minutes (pints) or 25 minutes (quarts).
  6. Cool jars on a towel for at least 12 hours before storing.
