  • 4 medium yellow onions (about 1 1/2 pounds total)
  • 2 tablespoons butter (melted)
  • 1 tablespoon olive oil
  • ⅓ cup balsamic vinegar
  • 2 tablespoons dry white wine (or reduced-sodium chicken broth or water)
  • 1 tablespoon sugar
  • ¼ teaspoon salt
  • ⅛ teaspoon ground black pepper
  • Fresh thyme leaves (for garnish)

Instructions

  1. Preheat oven to 425°F (220°C).
  2. In a baking dish, combine melted butter and olive oil.
  3. Whisk in balsamic vinegar, white wine (or broth/water), sugar, salt, and pepper until well combined.
  4. Peel onions, slice in half from stem to root, and place cut-side up in the baking dish.
  5. Cover loosely with foil and bake for 30 minutes.
  6. Remove foil, turn onions cut-side down, and continue baking uncovered for an additional 20–25 minutes until tender and caramelized.
  7. Before serving, turn onions cut-side up again and garnish with fresh thyme if desired.
