  • 1 lb boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 4 cloves garlic
  • 1/2 cup chicken broth
  • Juice of 1 lemon
  • 1 cup long-grain white rice
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Season chicken strips with salt and pepper.
  2. In a large skillet, heat olive oil over medium-high heat. Cook seasoned chicken for 3-4 minutes on each side until golden brown. Remove and set aside.
  3. In the same skillet, sauté minced garlic for 1 minute until fragrant. Add chicken broth, lemon juice, and optional white wine. Simmer for 3-4 minutes.
  4. Stir in butter until melted, return chicken to sauce, and toss to coat.
  5. In a medium saucepan, combine rice, chicken broth, and minced garlic. Bring to a boil; reduce heat to low, cover, and simmer for 15-20 minutes until rice is tender.
  6. Stir in grated Parmesan cheese into the rice; season with salt and pepper to taste.
  7. Serve garlic parmesan rice topped with chicken scampi and garnish with fresh parsley.
