  • ½ teaspoon baking powder
  • 1 ¼ teaspoon cream of tartar
  • ½ teaspoon salt
  • ½ cup canola oil
  • â…” cup granulated sugar
  • 1 large egg (lightly beaten)
  • 1 cup finely grated zucchini
  • 1 cup mashed bananas
  • 1 ½ cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8" x 4" loaf pan.
  2. In a medium bowl, whisk together flour, baking soda, baking powder, cream of tartar, and salt. Set aside.
  3. In a stand mixer bowl, beat together canola oil and granulated sugar until well combined. Add the beaten egg and mix until incorporated. Gradually add the grated zucchini.
  4. With the mixer running on low, alternate adding the dry ingredients and mashed bananas until just combined.
  5. Gently fold in chocolate chips with a spatula.
  6. Pour batter into the prepared loaf pan and bake for 50 to 55 minutes, tenting with foil after about 40 minutes to prevent over-browning. Let cool before slicing.
