  • 2 pounds shrimp (peeled and deveined)
  • 1 English cucumber (small diced)
  • 3 green onions (thinly sliced)
  • β…“ cup mayonnaise
  • β…“ cup sour cream
  • 1 large lime (zested and juiced)
  • 2 tablespoons chopped fresh dill
  • 1 tablespoon Dijon mustard
  • 1 garlic clove (minced)
  • ΒΌ teaspoon kosher salt

Instructions

  1. Prepare the dressing by mixing mayonnaise, sour cream, lime zest and juice, dill, mustard, garlic, salt, and pepper. Chill to enhance flavors.
  2. Boil water in a large pot and cook shrimp for 2 to 3 minutes until pink.
  3. Prepare an ice water bath and transfer shrimp immediately to cool for about 3 minutes before draining.
  4. Chop cooled shrimp into bite-sized pieces and combine with cucumber, green onion, and the dressing in a mixing bowl.
