Ingredients
- 2 large chicken breasts
- 4 tablespoons butter
- 1 tablespoon olive oil
- ¼ cup chicken broth (or dry white wine)
- 1 tablespoon lemon juice + zest of 1 lemon
- 1 tablespoon brined capers (drained)
- ½ cup heavy cream
- Salt & pepper to taste
- Flour for dredging
- Optional: Chopped parsley and freshly grated parmesan cheese for garnish
Instructions
- Slice chicken breasts into four thinner cutlets and season with salt, pepper, and garlic powder. Dredge in flour.
- Heat 2 tablespoons butter and olive oil in a skillet over medium-high heat. Cook chicken for 4-5 minutes per side until golden brown. Remove from skillet.
- In the same skillet, add chicken broth, lemon juice, lemon zest, remaining butter, and capers. Scrape the bottom to incorporate browned bits.
