  • 1 tablespoon olive oil
  • 1 pound lean ground beef
  • 1/2 medium onion (chopped)
  • 1 tablespoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground cumin
  • 2 cups crushed Doritos (Nacho Cheese flavor)
  • 1 (14 ounce) can black beans (drained & rinsed)
  • 1 (12 ounce) can corn (drained)
  • 1 (15.5 ounce) jar salsa
  • 2 cups shredded Mexican cheese blend (divided)

Instructions

  1. Preheat the oven to 350°F and position the rack in the middle.
  2. In a skillet, heat olive oil over medium-high heat and brown the ground beef for about 5 minutes. Add the chopped onion, chili powder, garlic powder, and cumin; cook until the onion is soft.
  3. Spread crushed Doritos evenly in a 9×13 casserole dish.
  4. Drain excess fat from the skillet if needed, then stir in black beans, corn, salsa, and half of the cheese until warm.
  5. Spoon the beef mixture over the Doritos layer.
  6. Top with remaining cheese and bake uncovered for 15-20 minutes until bubbly and golden.
  7. Serve with your choice of toppings like diced tomatoes or sour cream.
