- 95g plain (all-purpose) flour
- 2 tablespoons cocoa powder
- 1 teaspoon baking powder
- 225g dark chocolate (chopped)
- 56g butter (salted or unsalted)
- 2 eggs (room temperature)
- 100g caster sugar
- 90g Demerara sugar
- 1 teaspoon vanilla extract
- 85g chocolate chips
Instructions
- Preheat oven to 160ºC (320ºF) for fan or 170ºC (338ºF) for conventional. Line a baking tray with parchment paper.
- Melt dark chocolate and butter in a heatproof bowl over simmering water. Stir in vanilla once melted.
- In a separate bowl, whisk eggs and sugars on high speed until thick and fluffy (about 5 minutes).
- Sift flour, cocoa powder, baking powder, and salt in another bowl; fold in chocolate chips.
