  • 1 1/2 cups grape tomatoes, halved
  • 1 seedless cucumber, sliced
  • 1 bell pepper, diced
  • 1/2 small red onion, diced
  • 1/2 cup Kalamata olives
  • 2/3 cup feta cheese
  • 1/4 cup chopped parsley
  • 1/2 cup olive oil
  • 1/4 cup water
  • 3 tablespoons red wine vinegar
  • 2 tablespoons lemon juice
  • 2 tablespoons honey
  • 1 teaspoon dijon mustard
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried dill
  • 1 teaspoon dried mint
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon freshly ground black pepper

Instructions

  1. Cook the bowtie pasta according to package directions until al dente. Drain and rinse with cold water.
  2. Chop the tomatoes, cucumber, bell pepper, and red onion; add to a large mixing bowl with olives.
  3. In a jar with lid, combine olive oil, water, vinegar, lemon juice, honey, mustard, garlic, oregano, dill, mint, salt, and pepper; shake well.
  4. Add cooked pasta to the veggie mixture along with feta and parsley; toss gently.
  5. Drizzle dressing over salad and mix until evenly coated.
  6. Serve immediately or chill for enhanced flavor.
