  • 1 medium onion (chopped)
  • 3 sticks celery (chopped)
  • 4 cloves garlic (minced)
  • 1 pound lean ground beef
  • 3 tablespoons flour
  • 1 (6-ounce) can tomato paste
  • 4 cups beef broth (+ more if needed)
  • 1 tablespoon Worcestershire sauce
  • 1/2 teaspoon Italian seasoning
  • 2 Russet potatoes (peeled & diced)
  • 4 medium carrots (peeled & sliced)
  • 1 cup frozen peas (optional)
  • Salt & pepper (to taste)

Instructions

  1. Heat olive oil in a soup pot over medium-high heat. Sauté chopped onion and celery for 5-7 minutes until softened. Add minced garlic and cook for another 30 seconds.
  2. Stir in the lean ground beef, breaking it apart, and cook until browned, about 8 minutes.
  3. Sprinkle the flour into the pot and stir for 1-2 minutes until combined. Mix in the tomato paste.
  4. Pour in the beef broth, Worcestershire sauce, Italian seasoning, diced potatoes, and sliced carrots. Bring to a boil then reduce heat to a rapid simmer. Cover slightly and cook for at least 30 minutes.
  5. Occasionally stir and adjust consistency with more broth if necessary. For a thicker stew, cook uncovered longer before stirring in peas and seasoning with salt and pepper.
