  • 2 cups cherry tomatoes
  • 8 oz (220g) pasta (e.g., fusilli)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon black pepper
  • 1 teaspoon fennel seeds
  • 1/4 cup vegetable stock
  • Optional: 1/2 teaspoon cayenne pepper, 1/2 teaspoon chili flakes
  • 1 cup grated parmesan
  • Fresh basil or parsley for garnish

Instructions

  1. Cook the pasta according to package directions until al dente, then drain and set aside.
  2. In a skillet, heat olive oil over medium heat. Sauté diced zucchini until golden brown on edges; remove from skillet.
  3. In the same skillet, add cherry tomatoes, black pepper, fennel seeds, garlic powder, cayenne (if using), and vegetable stock. Cover and cook until tomatoes blister.
  4. Push tomatoes to one side; add cooked zucchini, drained pasta, and grated parmesan. Stir to combine; add more vegetable stock if necessary.
