  • 1 lb boneless, skinless chicken thighs or breasts
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • ½ cup BBQ sauce
  • ¼ cup honey
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 cup mixed vegetables (fresh or frozen)
  • Chopped green onions or parsley for garnish

Instructions

  1. Heat a large skillet over medium heat. Season the chicken with garlic powder, onion powder, smoked paprika, salt, and pepper. Sear on both sides until golden brown; remove from the pan.
  2. In the same pan, toast uncooked rice for 1-2 minutes until lightly golden.
  3. Pour in chicken broth, then stir in BBQ sauce and honey until well combined.
  4. Return the chicken to the pan on top of the rice mixture. Bring to a gentle boil.
  5. Reduce heat to low, cover, and cook for 15 minutes.
  6. Add mixed vegetables on top; cover and cook for another 5 minutes until rice is tender and chicken reaches an internal temperature of 165°F (74°C).
  7. Remove from heat, let rest for 5 minutes, fluff rice gently with a fork, and garnish before serving.
