Ingredients
- 1 tablespoon olive oil
- 1 pound kielbasa, cut into ½ inch pieces
- 2 garlic cloves, minced
- ½ cup yellow onion, finely diced
- ½ cup carrots, peeled and finely diced
- ½ cup celery, finely sliced
- 4 cups chicken stock
- 1 ½ pounds potatoes, cut into cubes
- 2 cups heavy cream (or whole milk)
- 2 cups shredded cheddar cheese
- ½ cup shredded parmesan cheese
- Salt and black pepper to taste
- Chopped parsley for garnish
Instructions
- Heat olive oil in a Dutch oven over medium-high heat. Cook kielbasa for about 5–6 minutes until browned. Remove with a slotted spoon.
- Add garlic, onions, carrots, and celery to the pot; sauté for 2 minutes until fragrant.
- Pour in chicken stock and add cubed potatoes. Bring to a boil, then reduce heat and cover; cook for about 15 minutes until potatoes are tender.
- Return the cooked kielbasa to the pot; add cream, cheddar cheese, parmesan cheese, salt, and pepper. Stir well and cook on low heat for an additional 5–10 minutes until all cheese has melted.
- Stir in chopped parsley before serving.
