  • 1 large egg (at cool room temperature)
  • 1 ½ cups powdered sugar (sifted)
  • 2 to 3 tbsp fresh lemon juice

Instructions

  1. Preheat oven to 350°F (180°C) and line baking sheets with parchment paper.
  2. In a small bowl, whisk together flour, cornstarch, and baking powder; set aside.
  3. In a large mixing bowl, cream butter and sugar until light and fluffy. Add lemon zest and lavender; mix well.
  4. Beat in the egg until combined.
  5. Gradually add dry ingredients to wet mixture until just combined.
  6. Scoop tablespoon-sized balls of dough onto prepared sheets, spacing them about 2 inches apart.
  7. Gently flatten each cookie ball to about ⅓ inch thick.
  8. Bake for 12 to 15 minutes until edges are golden; cool on wire racks.
  9. For the glaze, whisk powdered sugar with lemon juice until smooth; drizzle over cooled cookies.
