- 1 large egg (at cool room temperature)
- 1 ½ cups powdered sugar (sifted)
- 2 to 3 tbsp fresh lemon juice
Instructions
- Preheat oven to 350°F (180°C) and line baking sheets with parchment paper.
- In a small bowl, whisk together flour, cornstarch, and baking powder; set aside.
- In a large mixing bowl, cream butter and sugar until light and fluffy. Add lemon zest and lavender; mix well.
- Beat in the egg until combined.
- Gradually add dry ingredients to wet mixture until just combined.
- Scoop tablespoon-sized balls of dough onto prepared sheets, spacing them about 2 inches apart.
- Gently flatten each cookie ball to about ⅓ inch thick.
- Bake for 12 to 15 minutes until edges are golden; cool on wire racks.
- For the glaze, whisk powdered sugar with lemon juice until smooth; drizzle over cooled cookies.
