  • 1 cup fresh basil leaves and tender stems
  • 1 teaspoon fresh thyme leaves (or generous pinch dried thyme)
  • one 28-ounce can crushed tomatoes
  • 2 cups vegetable stock or broth
  • optional: ½ cup dry, unoaked white wine
  • 2 cups heavy cream, milk, or unsweetened plant milk of choice
  • kosher salt and ground black pepper, to season

Instructions

  1. Sauté diced onion and carrots in olive oil until softened. Add garlic, tomato paste, and crushed red pepper flakes, cooking until fragrant.
  2. Stir in fresh basil, thyme, crushed tomatoes, vegetable broth, and optional white wine. Bring to a boil, then simmer until vegetables are tender.
  3. Blend the soup until smooth using an immersion blender or by transferring it to a stand blender.
  4. Stir in heavy cream or plant milk; heat gently while stirring.
  5. Serve hot with your favorite accompaniments.
