  • 2/3 cup white sugar
  • 1 cup chopped fresh or canned peaches (divided)
  • 1/2 cup milk
  • 1 egg
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • For the topping: 1/4 cup all-purpose flour
  • 1/4 cup white sugar
  • 1/2 teaspoon cinnamon
  • 3 tablespoons cold unsalted butter

Instructions

  1. Preheat the oven to 350°F (175°C). Grease or line a muffin tin with paper liners.
  2. In a large mixing bowl, whisk together flour, baking powder, salt, and sugar. Stir in three-quarters of the chopped peaches.
  3. In another bowl, mix milk, egg, vegetable oil, and vanilla. Combine with dry ingredients until just mixed; do not overmix.
  4. Fill muffin cups about three-quarters full with batter.
  5. In a small bowl, combine flour, sugar, and cinnamon for the topping. Add cold butter in chunks and mix until crumbly.
  6. Top each muffin with remaining chopped peaches and streusel mixture.
  7. Bake for approximately 20 minutes or until golden brown and a toothpick comes out clean.
