- 1 cup chopped fresh or canned peaches (divided)
- 1/2 cup milk
- 1 egg
- 1/4 cup vegetable oil
- 1 teaspoon vanilla extract
- For the topping: 1/4 cup all-purpose flour
- 1/4 cup white sugar
- 1/2 teaspoon cinnamon
- 3 tablespoons cold unsalted butter
Instructions
- Preheat the oven to 350°F (175°C). Grease or line a muffin tin with paper liners.
- In a large mixing bowl, whisk together flour, baking powder, salt, and sugar. Stir in three-quarters of the chopped peaches.
- In another bowl, mix milk, egg, vegetable oil, and vanilla. Combine with dry ingredients until just mixed; do not overmix.
- Fill muffin cups about three-quarters full with batter.
- In a small bowl, combine flour, sugar, and cinnamon for the topping. Add cold butter in chunks and mix until crumbly.
