  • 6 boneless pork loin chops (about 1" thick)
  • Salt and pepper
  • 1 tablespoon olive oil
  • 1 cup pineapple juice
  • 1/4 cup barbecue sauce
  • 1/4 cup brown sugar
  • 1 teaspoon sea salt
  • 1 teaspoon ground ginger
  • 1 teaspoon garlic powder
  • 1 teaspoon dried minced onions
  • 1 cup pineapple tidbits

Instructions

  1. Season the pork chops with salt and pepper on both sides.
  2. In a mixing bowl, combine pineapple juice, barbecue sauce, brown sugar, sea salt, ginger, garlic powder, and minced onions; mix well.
  3. Heat olive oil in a cast iron skillet over medium-high heat. Sear pork chops for about 2 minutes on each side until golden brown.
  4. Remove chops and cover them with foil to keep warm.
  5. Pour the sauce into the skillet to deglaze, bringing it to a boil before reducing heat to medium.
  6. Return pork chops to skillet and simmer in sauce for about 8-10 minutes until they reach an internal temperature of at least 145°F.
  7. Stir in the reserved pineapple tidbits before serving.
