Ingredients
- 1/2 cup softened butter
- 3/4 cup granulated sugar
- 2 eggs
- 1 tbsp lemon juice
- 1/4 tsp salt
- Zest of 1/2 lemon
- 3/4 cup all-purpose flour
- 3/4–1 cup fresh raspberries
- 1 cup powdered sugar
- 1 tbsp seedless raspberry jam
Instructions
- Preheat oven to 350°F (175°C). Prepare an 8×8 square pan with non-stick spray or parchment paper.
- In a large bowl, mix together softened butter, granulated sugar, eggs, lemon juice, salt, and lemon zest until well combined.
- Gradually add in all-purpose flour and mix until just combined.
- Gently fold in fresh raspberries to avoid smashing them.
- Pour the batter into the prepared pan and spread evenly. Bake for about 25 minutes or until edges are lightly browned and the center is set.
- Allow cooling completely before glazing with a mixture of powdered sugar, raspberry jam, lemon juice, and additional lemon zest.
