  • 4 tablespoons olive oil
  • 1 teaspoon salt
  • Pepper to taste
  • 1 large onion (diced)
  • 4 cloves garlic (minced)
  • 4 cups vegetable or chicken broth (low sodium recommended)
  • 1 tablespoon dried basil
  • 1 tablespoon Italian seasoning
  • 2 tablespoons sugar
  • 1 cup heavy cream
  • Fresh basil and parmesan cheese (optional for garnish)

Instructions

  1. Preheat your oven to 450°F. Place tomatoes cut side up on a baking sheet, drizzle with olive oil, sprinkle with salt and pepper, and roast for 30-35 minutes until caramelized.
  2. In a large pot over medium-high heat, sauté diced onion in remaining olive oil until soft, then add minced garlic and cook for one more minute.
  3. Combine roasted tomatoes with their juices, broth, basil, Italian seasoning, remaining salt, and sugar in the pot.
  4. Blend the mixture until smooth using an immersion blender or regular blender.
  5. Simmer on low heat for about 30 minutes; stir in heavy cream just before serving.
