  • 2 tablespoons vegetable oil
  • 1.5 pounds boneless short ribs (cut into 1-inch cubes)
  • 1 pound Mexican chorizo
  • 1 large onion (chopped)
  • 2 jalapeno peppers (chopped)
  • 6 cloves garlic (chopped)
  • 3 cans (15-ounce) fire-roasted tomatoes
  • 1 cup beef stock
  • 1 can black beans (drained)
  • 1 can red kidney beans (drained)
  • Worcestershire sauce
  • Chili powder
  • Mexican oregano
  • Cumin
  • Hot sauce

Instructions

  1. Heat vegetable oil in a large pot over medium-high heat. Sear short ribs until browned, then set aside.
  2. In the same pot, sauté chopped onion and jalapeños for about 5 minutes until softened.
  3. Stir in garlic and chorizo; cook until chorizo is mostly cooked through.
  4. Add spices and stir for one minute to bloom flavors.
  5. Pour in beef stock, scraping up browned bits from the bottom of the pot.
  6. Return short ribs to the pot along with tomatoes, beans, Worcestershire sauce, and hot sauce.
  7. Bring to a boil, then reduce heat and simmer covered for about 2 hours.
  8. If needed, thicken with cornmeal before serving.
