Ingredients
- 2 pounds yellow squash (sliced)
- 1/4 cup butter
- 1/2 cup diced onion
- 1/2 teaspoon garlic powder
- 3/4 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup sour cream
- 1 large egg (beaten)
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1 cup butter crackers (finely crushed)
Instructions
- In a large pan over medium heat, melt 1 tablespoon of butter. Sauté the diced onion for 7-8 minutes until soft.
- Add sliced yellow squash and cook for another 10-12 minutes until soft.
- Drain excess moisture using a colander lined with a towel for about 5 minutes.
- In a mixing bowl, combine drained squash mixture with garlic powder, salt, black pepper, sour cream, beaten egg, cheddar cheese, and half of the Parmesan cheese.
- For the topping, mix crushed crackers with melted butter and remaining Parmesan cheese.
- Transfer the squash mixture to a baking dish and spread the cracker topping evenly.
- Bake in a preheated oven at 350°F (175°C) for about 25 minutes until golden brown.
