  • 2 pounds yellow squash (sliced)
  • 1/4 cup butter
  • 1/2 cup diced onion
  • 1/2 teaspoon garlic powder
  • 3/4 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup sour cream
  • 1 large egg (beaten)
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup butter crackers (finely crushed)

Instructions

  1. In a large pan over medium heat, melt 1 tablespoon of butter. Sauté the diced onion for 7-8 minutes until soft.
  2. Add sliced yellow squash and cook for another 10-12 minutes until soft.
  3. Drain excess moisture using a colander lined with a towel for about 5 minutes.
  4. In a mixing bowl, combine drained squash mixture with garlic powder, salt, black pepper, sour cream, beaten egg, cheddar cheese, and half of the Parmesan cheese.
  5. For the topping, mix crushed crackers with melted butter and remaining Parmesan cheese.
  6. Transfer the squash mixture to a baking dish and spread the cracker topping evenly.
  7. Bake in a preheated oven at 350°F (175°C) for about 25 minutes until golden brown.
