Ingredients
- 2 pounds yellow squash (sliced ¼ inch thick)
- 1/4 cup butter
- 1/2 cup diced onion
- 1/2 teaspoon garlic powder
- 3/4 teaspoon salt
- 1/2 teaspoon black pepper
- ½ cup sour cream
- 1 large egg (beaten)
- 1 cup shredded cheddar cheese
- ½ cup grated Parmesan cheese
- 1 cup butter crackers (finely crushed)
Instructions
- In a large frying pan over medium heat, melt 1 tablespoon of butter and sauté the diced onion until soft (7-8 minutes).
- Add the sliced yellow squash and cook until tender (10-12 minutes), stirring frequently.
- Drain excess moisture by placing cooked squash in a colander lined with a towel for at least 5 minutes.
- In a mixing bowl, combine drained squash, onion, garlic powder, salt, black pepper, sour cream, beaten egg, cheddar cheese, and 1/4 cup Parmesan. Mix well.
- Stir melted remaining butter into crushed crackers and remaining Parmesan.
- Spread the squash mixture into a greased baking dish and top with the cracker mixture.
