  • 1 stick (4 ounces) unsalted butter, VERY cold and cut into tiny pieces
  • 1 large egg
  • 1/2 cup whole milk
  • 2 tablespoons heavy cream
  • 1 cup fresh strawberries, hulled and quartered
  • 1 large egg, beaten
  • 1 teaspoon water
  • 2 tablespoons sugar, for sprinkling
  • 2 tablespoons heavy cream
  • 3/4 cup confectioners' sugar
  • 1 teaspoon vanilla extract
  • Tiny pinch of salt (1/8 teaspoon or less)

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix together flour, salt, baking powder, baking soda, and granulated sugar.
  3. Cut cold butter into the dry mixture until it resembles coarse meal.
  4. In another bowl, whisk together the egg, whole milk, and heavy cream before adding to the flour mixture; stir gently until moistened.
  5. Fold in quartered strawberries using a rubber spatula.
  6. Transfer dough to a floured surface and shape into an 8-inch circle; cut into 8 wedges.
  7. Brush with beaten egg wash and sprinkle sugar on top.
  8. Bake for about 18 minutes until golden brown; cool slightly before glazing.
