Ingredients

  • 2 bunches kale
  • 34 fresh peaches
  • 1 cup blueberries
  • 1/4 cup pepitas
  • 4 lemons (for vinaigrette)
  • 2 Tbsp + 2 tsp honey
  • Olive oil
  • Cracked black pepper

Instructions

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Spread pepitas on the baking sheet and toast for 5–6 minutes until golden.
  3. In a bowl or jar, whisk together lemon juice, honey, olive oil, and black pepper for the vinaigrette and refrigerate.
  4. Remove stems from kale, chop into bite-sized pieces, add olive oil and lemon juice, then massage for about 5 minutes until softened.
  5. Dice peaches and rinse blueberries before adding them to the massaged kale.
  6. Drizzle vinaigrette over the salad mixture and toss to combine.
  7. Serve topped with toasted pepitas immediately.
