  • 1 ½ tbsp taco seasoning mix
  • ½ cup water
  • ½ cup salsa con queso
  • 3 tortillas (flour or corn)
  • 2 cups shredded Mexican cheese blend or cheddar cheese
  • Sour cream (for serving)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, cook the ground beef until browned, breaking it apart as it cooks.
  3. Stir in taco seasoning and water; simmer for 2-3 minutes until combined. Mix in salsa con queso and remove from heat.
  4. Spray an 8-inch round baking tin with cooking spray.
  5. Layer the casserole by placing one tortilla at the bottom, adding 1/3 of the beef mixture, then sprinkling with 1/3 of the cheese. Repeat twice more, ending with cheese on top.
  6. Bake for about 20 minutes or until the cheese is melted and bubbly.
  7. Allow to cool slightly before slicing into wedges and serve warm with sour cream.
