- 1 pound lean ground beef
- 1 packet taco seasoning
- 15 ounces canned black beans (drained)
- 8 ounces canned corn (drained)
- 2 cups halved cherry tomatoes
- 2 cups shredded Fiesta blend cheese
- 16 ounces Catalina dressing
- 9 ounces Nacho Cheese Doritos (crushed)
Instructions
- Cook rotini according to package directions in a large pot of boiling water. Drain and rinse with cold water.
- In a skillet over medium heat, brown the ground beef until cooked through. Drain excess grease and stir in taco seasoning with ¼ cup of water; cook until liquid evaporates.
- In a large mixing bowl, combine the cooked pasta, seasoned beef, black beans, corn, cherry tomatoes, and cheese. Mix well.
- In a separate bowl, whisk together Catalina dressing and sour cream until smooth.
- Pour the dressing over the pasta mixture and gently stir until everything is coated.
- If serving immediately, fold in crushed Doritos and shredded lettuce. Garnish with cilantro.
