Ingredients
- 2 lbs chicken thighs (or breasts), cut into 1" cubes
- 2 tbsp cornstarch
- 1 cup water
- 1/3 cup brown sugar
- 1/3 cup low sodium soy sauce
- 2 cloves garlic, minced
- 1 tbsp rice vinegar
- 1/2 tbsp fresh ginger, minced
- 1 tbsp honey
- 1/2 tsp sesame oil
- Sesame seeds and chopped green onions for garnish
Instructions
- Prepare the teriyaki sauce by combining cornstarch and water in a bowl. In a saucepan, mix all other sauce ingredients with the cornstarch mixture, bring to a simmer until thickened, then cool.
- Marinate the chicken cubes in half of the cooled sauce for at least 30 minutes.
- Preheat the grill to medium heat and thread marinated chicken onto skewers.
- Grill skewers, turning every few minutes until cooked through (internal temperature should reach 165°F) and baste with reserved sauce during the last few minutes.
- Serve hot with sesame seeds and green onions on top.
