Ingredients
- 8 oz cooked glass noodles
- 1 lb large shrimp, cooked and peeled
- 1/4 small red cabbage
- 1 small red bell pepper
- 1 small carrot
- 1/2 medium jalapeño
- 1/2 large cucumber
- 2 green onions
- 1/2 cup roasted peanuts
- 1/4 cup fresh cilantro
- 1/4 cup creamy peanut butter
- 1 tbsp lime juice
- 1 tbsp toasted sesame oil
- 1/2 tbsp fish sauce
- 2 tbsp rice vinegar
- 1 tbsp sweet chili sauce
- 1/2 tbsp coconut aminos
- 1 tsp fresh ginger
Instructions
- Make the dressing by microwaving peanut butter for 30 seconds; whisk in remaining dressing ingredients until smooth.
- Cook shrimp in boiling water for about 2-3 minutes; remove with a slotted spoon.
- Cook glass noodles in the same pot following package directions; drain and cool slightly.
- In a large bowl, combine noodles, shrimp, cabbage, bell pepper, carrot, jalapeño, cucumber, green onions, peanuts, and cilantro. Pour dressing over and toss to combine.
- Serve garnished with sesame seeds and sriracha if desired.
