  • 8 oz cooked glass noodles
  • 1 lb large shrimp, cooked and peeled
  • 1/4 small red cabbage
  • 1 small red bell pepper
  • 1 small carrot
  • 1/2 medium jalapeño
  • 1/2 large cucumber
  • 2 green onions
  • 1/2 cup roasted peanuts
  • 1/4 cup fresh cilantro
  • 1/4 cup creamy peanut butter
  • 1 tbsp lime juice
  • 1 tbsp toasted sesame oil
  • 1/2 tbsp fish sauce
  • 2 tbsp rice vinegar
  • 1 tbsp sweet chili sauce
  • 1/2 tbsp coconut aminos
  • 1 tsp fresh ginger

Instructions

  1. Make the dressing by microwaving peanut butter for 30 seconds; whisk in remaining dressing ingredients until smooth.
  2. Cook shrimp in boiling water for about 2-3 minutes; remove with a slotted spoon.
  3. Cook glass noodles in the same pot following package directions; drain and cool slightly.
  4. In a large bowl, combine noodles, shrimp, cabbage, bell pepper, carrot, jalapeño, cucumber, green onions, peanuts, and cilantro. Pour dressing over and toss to combine.
  5. Serve garnished with sesame seeds and sriracha if desired.
