- 6 large russet baking potatoes
- 12 oz bacon
- 1 cup half and half or heavy cream
- 1 container sour cream (8 oz)
- 3 cups shredded sharp cheddar cheese
- 1 packet dry Ranch salad dressing mix
Instructions
- Preheat oven to 450°F. Scrub potatoes and rub with vegetable oil, salt, and pepper.
- Bake potatoes on a baking sheet for 60–75 minutes until tender; reduce oven temperature to 350°F.
- Cook bacon until crispy; drain and crumble.
- Once cool, halve baked potatoes and scoop out insides into a mixing bowl; mash with some chunks left for texture.
- Mix in sour cream, half and half, melted butter (reserve some), ranch mix, garlic salt, granulated garlic, onion powder, and black pepper.
- Fold in bacon bits, 2 cups of cheese, and green onions.
- Pour mixture into a greased 13×9-inch baking dish; top with remaining cheese and dot with reserved butter.
