  • 1 pound ground spicy Italian sausage
  • 3 garlic cloves, minced
  • 1 medium white onion, diced
  • 1.5 pounds Yukon Gold potatoes, diced
  • 5 to 6 cups chicken stock
  • 2 to 3 cups chopped fresh kale
  • 1 cup heavy whipping cream
  • fine sea salt and freshly-ground black pepper
  • 6 pieces bacon, cooked and crumbled

Instructions

  1. In a large stockpot over medium-high heat, brown the ground sausage until fully cooked. Remove with a slotted spoon and reserve some grease.
  2. Sauté diced onions in the reserved grease for about 5 minutes, then add minced garlic and cook for an additional minute.
  3. Add the diced potatoes and chicken stock along with the cooked sausage to the pot. Bring to simmer for about 10 minutes or until the potatoes are tender.
  4. Stir in chopped kale and heavy cream; simmer for another 5 minutes. Season with salt and pepper to taste.
  5. Serve warm, garnished with crumbled bacon.
