Ingredients
- 1 pound ground spicy Italian sausage
- 3 garlic cloves, minced
- 1 medium white onion, diced
- 1.5 pounds Yukon Gold potatoes, diced
- 5 to 6 cups chicken stock
- 2 to 3 cups chopped fresh kale
- 1 cup heavy whipping cream
- fine sea salt and freshly-ground black pepper
- 6 pieces bacon, cooked and crumbled
Instructions
- In a large stockpot over medium-high heat, brown the ground sausage until fully cooked. Remove with a slotted spoon and reserve some grease.
- Sauté diced onions in the reserved grease for about 5 minutes, then add minced garlic and cook for an additional minute.
- Add the diced potatoes and chicken stock along with the cooked sausage to the pot. Bring to simmer for about 10 minutes or until the potatoes are tender.
- Stir in chopped kale and heavy cream; simmer for another 5 minutes. Season with salt and pepper to taste.
- Serve warm, garnished with crumbled bacon.
